There's a...Excellent, I'll have to try the chicken. There's a couple of things you can do with Eggplant parmesian. You can fry it, or quickly skillet fry and finish in an oven. Or do the whole thing in the oven. If you choose to do the whole thing in an oven I'd assemble it like a casserole so it'll tolerate longer cooking times.<br /><br />Another thing to try is a baba ghanoush which is a delightul eggplant dip you serve with Pita. Just need a bit of Tahini, garlic and lemon juice. <br /><br />I've actually done both on the blog.
